Despite having been out of school for about 5 years now, September still signifies I change in tempo.  With the days getting shorter it’s hard to get fired up to make an extravagant 2-hour dinner on a Tuesday night when it’s already dark by 6pm.  Every once in a while I need a recipe that can be on the table in 30 minutes to an hour for a meal that doesn’t involve takeout.  Yes, quick and easy weeknight meals are key some nights.

Here are some recipes to make the back-to-school transition a little easier.  To soften the blow of the waning days of summer. And to put some good food in your belly as the temperatures drop…
